I made my very first peach pie today. We were supposed to go to Ribfest tonight with some friends but the weather is way too windy, rainy, and cold for us to be outside. We're wimps! So, they invited us over to their place instead for our very own mini ribfest. Yum! I'm in charge of bringing dessert so I decided to use up a basket of peaches I had on hand and make a pie. The recipe is just a simple one from the Betty Crocker cookbook (except I omitted the nutmeg).
I tried so hard to make the pastry just right! I used eggwash on the bottom and top, chilled the dough before rolling and baking, and used cold ingredients all in hopes that it will turn out perfectly. (Don't wanna serve a soggy pie!) The good news is that I don't think I messed up this time. Yeah!!!!
It looks beautiful! Did you know when you make a fruit pie - sprinkle some crushed up crackers (I've used both saltiness and ritz and either works) on the bottom of the crust before you add the fruit filling and you won't have a soggy bottom. You'll never know they are there. We have a rib cook-off in our area also this weekend.
