I'm not sure about you, but I pin recipes on Pinterest all the time. 'Cept I've been pinning them and not actually making them. At one point I had 50 recipes pinned that I had never even tried.
I decided to just pick a recipe and go for it. I went with a Chocolate Chocolate Chip Zucchini Cake that was originally posted by JULIEVR on The Family Kitchen.
I renamed it Double Chocolate Zucchini Loaf so that it sounds healthier. I thought I was pretty brave considering I've never made a single thing with zucchini before.
Here is the original recipe (with my little tweaks in brackets):
Double Chocolate Zucchini Loaf

Ingredients:
2 1/2 cups all-purpose flour (I used unbleached flour)
1/2 cup cocoa
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt (I cut down on the salt a bit)
1 1/2 cups sugar
3 eggs
1 cup canola oil
2 teaspoons vanilla
2 packed cups grated zucchini (don’t peel it) (I peeled it)
1 cup chocolate chips (I used mini semi-sweet chocolate chips)
1/2 cup cocoa
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt (I cut down on the salt a bit)
1 1/2 cups sugar

2 packed cups grated zucchini (don’t peel it) (I peeled it)
1 cup chocolate chips (I used mini semi-sweet chocolate chips)
Directions:
Preheat oven at 350 F. Spray two 9×5 inch pans with nonstick spray (I greased the pans with butter instead).
In a large bowl, stir together flour, cocoa, baking soda, baking powder and salt.
In a medium bowl, beat the sugar and eggs until light and fluffy. Add the oil and vanilla. Add to the dry ingredients along with the zucchini and chocolate chips. Stir just until combined, and divide between the loaf pans.
Bake for 50-60 minutes, or until the tops are cracked and springy to the touch. Makes 2cakes loaves.

Mmmm, zucchinis are good. I think the sugar and chocolate help a bit. Heh heh heh.

ReplyDeleteMy sister has a recipe for chocolate cake and she uses beetroot. It is a similar concept and you cant even taste anything but chocolate.. Delish!!!
